The three kinds of Vegas taco
- The late-night truck. The post-midnight taco is a Vegas food group unto itself. Follow the crowd and the smell.
- The neighborhood taqueria. A short ride off-Strip gets you al pastor carved off the trompo and salsas that mean business.
- The upscale take. Several Strip restaurants do a refined, mezcal-forward version worth dressing up for.
How we order
Start with al pastor to judge a place, then branch out. Corn tortillas, doubled up. Whatever salsa the person next to you is raving about. And always, always the one you can’t pronounce.
The best taco in Vegas is rarely the closest one to your hotel — but it’s almost never far, and it’s almost always worth the trip.
